Hi everyone, I figure it's about time I update. I have been here since about 2001, and have really loved all the recipes and friends I have found here. I have a son who just turned 21 in June. He lives in Colorado where I was born and raised. I live with my DH of 12 years in Georgia, we are currently in North Georgia and love to hike when it's possible. I have had CFS (Chronic Fatigue Syndrome) and FM (Fibromyalgia) for more than 15 years so I am limited in what I can do. I have spent many years trying different therapies and alternative medicines and going to many doctors to find something that helps. (I say helps because I gave up on whether there was a cure a long time ago). Through trial and error have come up with a few things that makes my condition manageable. The thing that I've found to help the most is my diet. Although I don't have problems with Candida, I have found relief from my FM by sticking to a Candida diet. I have been on the diet consistently for almost a year, and have lost 30 pounds and still have been able to create good meals that stay within the limits of what I can eat. My DH has created a really good hot wing recipe I can eat since I can't eat his Habanero Chicken anymore.
A lot of my older recipes are regular fare, if you notice as the years go by I slowly start making stuff a little more toward my diet now LOL! All of my recipes are easy because of the fact that I don't have a lot of energy to do heavy duty cooking. I still love to cook and one day hope to get back in that darn kitchen and whip up some fancy vittles.

Favorite Foods:

I like to cook, but I really really love to eat. I used to lean a lot toward hot and spicy dishes, but also love most of the traditional southern down home cooking as well. I am completely addicted to cheese so thank God for Vegan Rella which tastes very close to the real thing. I have had to learn to find other foods that I can substitute and think I have done a pretty good job.
