Favorite cookbooks are anything by Julia Child, Alton Brown is also fabulous, and "The bread Baker's Apprentice: Mastering the Art of Extraordinary Bread" by Peter Reinhart, is a book full of good advice and how to's.
I have many favorites, but will try anything. A chef who is willing to try new foods and expand his/her palate is the key to being a good cook. My wife always said, "Limit your tastes and you limit your possibilities in the kitchen".
