I have celiac disease and upon diagnosis knew that I (and everyone who eats gluten-free around me) will NEVER be deprived. I'm also intolerant to casein, and all of my recipes are gluten and casein free.
I don't use rice flour, but sometimes post it for ease. I prefer amaranth, the most.
I am allergic to garlic and onions, so if they are missing from recipes - throw them in! I use garlic powder because often I cook for others, but then I still don't get it on my hands. You'd be surprised - you can't even tell.
I'm a vegetarian who does not consume dairy or eggs. However, I cook with meat and eggs for others (no dairy, though).
