I really got started cooking with the "Chicken on a Beer Can" cookbook, when I learned that the grill isn't just for steaks and burgers. After that, I started watching way too much food network and driving my wife crazy with new things I wanted to try out in the kitchen.... Every now and then she still has to put on the brakes and ask for something normal.
One of my favorite dishes has to be steelhead trout poached in beer, on the grill. Fairly simple to put together, just slice a red onion, put it on aluminum foil, put the trout on top, fold up the sides to make a boat shape, pour in a bottle of your favorite beer, roll the foil top together to seal it up, and put on a medium high grill for about 10-15 minutes. Bring it back to the kitchen, drain off the hot beer, and serve.
