I am the cook for my husband and our two teenagers, a vegetarian daughter, and a meat-loving son. We also have cats, dogs, and horses, but luckily I don't have to cook for them!
I like to cook, but find it hard to please the whole family and keep the food healthy. I prefer to use whole grains where possible. I rarely use refined oils, and never use trans fats. I also won't use meats from animals that are kept in cruel crowded conditions, such as commercial pork, chicken, and veal. The most common meats in my dishes are wild salmon, grass-fed buffalo, elk, and free range chicken. As far as I'm concerned, the less processed a food is, the better tasting and healthier it is.
I live in the mountains of Colorado. I enjoy horseback riding, skiing, and hiking with our dogs. I do a little gardening and I love being outdoors. I make homemade apricot, raspberry, and grape jam every year.
