Hi, I'm Chelle and this is my husband Bill. We live in Northern Califonia. Our family has been Vegans for 8 years now. It's out of necessity for my health since I've been diabetic for 16 years. I also have many food allergies. Eating organic, fresh, low-fat vegan nourishes and heals the body. It has done wonders for my emotional state as well as blood sugar.
Our favorite vegan cookbook author is JoAnne Stepaniak. She's amazing at making healthy foods taste rich and decadent. We love to modify unhealthy recipes into vegan yummies, and to make long tedious recipes into quick and easy ones to prepare.
I loves gourmet sandwiches served with a hot brothy soups and leafy salads that have unique vinaigrettes on it. Bill loves anything gourmet pretty much. It's hard to be specific because we rarely make the same dish twice.
I used to be a picky eater and still likes her food to taste a certain way. In other words, I want my healthy low-fat food to taste like the fattening, unhealthy stuff that I used to eat.
Neither of us want to live in the kitchen. We don't want to be in there any longer than an hour. We prefer 30 minute meals. We make a killer Mac & Cheeze, Lasagna & Pizza. Those are our teenage sons' and their buddie's favorites. We use a Mix & Match Memu so that we can make new types of Pizzas, Lasagnas, Stir-Frys and Cheezes for the boys' Mac & Cheeze.
I'm is a graphic designer and likes to write down each new recipe on a 4 x 6 card and photograph it so that if they do request a certain dish, one of us can make it for them.
