About 18 months ago, both of my children decided to become vegan. We had already adapted from a pretty healthy low-meat-consumption diet to a standard vegetarian diet in response to their decisions, so this has meant yet another transition. I myself enjoy trying out new recipies and I really like cooking vegan food because it feels so clean. I consider it an interesting challenge to find recipes that are as wonderful as my favorite meat and/ or cheese based recipes. I am lucky because my husband does the day-to-day cooking and I only get involved when there is more time to spend (weekends and holidays).
I spend my work life swimming around in data from hemodialysis patients, and looking for patterns. I do so much computer stuff that food makes a good contrast to the virtual world that I inhabit most of the time! I also love Irish music and try to do some bookbinding when time permits.
I used to make a wicked spaghetti and meatballs and also a really good Lasagna but I don't get much call for that now that my kids don't eat stuff like that. I finally learned to make pie crust so I enjoy making pies. Anything with apples makes me feel secure. I love all kinds of international cuisine but have to avoid really hot foods because they give me the hiccups!
