I am a new stay at home mom in Houston, TX and I am getting adjusted to this new way of life. I am amazed how the day passes quickly now that I am home all day! When I worked full-time, it dragged on for me, and now many times I look at the clock and see that my husband will be home soon and I am not even close to having supper ready and I haven't even made the bed! I have a new profound respect for full-time stay at home mothers. I hope to get really good at cooking so that it doesn't take SO much of my time, because it does. I need to get the experience necessary to get me to the point where I don't need to measure everything and most importantly, where I will be able to have an idea about what to make with what we have in the fridge without going to get a recipe every time. Gosh, I hope for that! My husband is Arab and grew up overseas to home cooked meals every single day, and I have alot to live up to. I atleast feel confident in my ability to know what needs to be done next time when a dish doesn't taste as good as I would have hoped. My husband has been impressed so far thanks to this website, but I am no where near his mom! You know those moments right when your husband is taking his first bite of a dish that you spent a hour or two making — you are pretending not to be paying attention to his reaction, but you are eagerly awaiting that "MMmmmmmm". That is me almost every evening.
Middle Eastern food is my favorite, which is good for me since my mother in law is Arab. I watched her cook a few things when she was visiting from overseas and if I can master them myslef, I will try to share some. I love potatoes cooked in any way, and I love anything cheesy.
