I'm a good ole southern boy, born in Louisiana, raised all over the country but mostly in Little Rock. I now live in Wellington, New Zealand. I am half Cajun and the other half a really wild mix of just about everything else. I grew up eating southern and cajun food and now am trying to combine that with a little Samoan and New Zealand influence. My wife is Samoan. I have learned to combine traditional southern and cajun flavours with a mix of Islander. I will be posting recipes that include these influences.
Zucchini Casserole is my signature dish with the family but I can make a really great seafood gumbo , or a great polosami (coconut creme wrapped in taro leaves and baked).
