I was born in the great state of Texas but grew up in Louisiana. I am back in Texas, but my roots pull me back to Louisiana often where I still have family. I grew up on creole food, the 'cajun" came later when Chef Paul Prudhomme threw some red fish in a white hot pan, "Blackened Redfish" and the rest is history. Cajun food was born! I still have an internal battle if offered gumbo or Tex Mex, I love them both.
