Meatloaf Sandwiches

I love meat loaf sandwiches for lunch. Recipe source: Bon Appetit (October 2009)

SERVES 1 (change servings and units)

Ingredients

  • 1/2 inch thick leftover meatloaf
  • 2 slices monterey jack cheese (or which ever deli cheese you have on hand)
  • 2 slices whole grain bread
  • olive oil

Directions

  1. 1
    Place meat loaf slice between 2 slices of cheese and 2 slices of bread.
  2. 2
    Brush outside of sandwich with olive oil.
  3. 3
    Over medium low heat cook sandwich in skillet, turning (3-5 minutes per side).

Good sandwich! I used Swiss cheese and ancient grain bread. This would be good with sliced tomatoes, too. Made for PRMR tag.
