My family's variation on meatloaf.

SERVES 4 -6 (change servings and units)

Ingredients

Meatloaf

  • 2 lbs ground beef
  • 1 1/4 ounces Lipton Onion Soup Mix
  • 1/2 cup diced onion
  • 1-2 garlic cloves, minced
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/3 cup chili sauce
  • 1 serrano pepper, diced (optional)
  • up to 1 cup crackers, crushed

Directions

    Preheat oven to 350°F.
  2. 2
    Saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.

    Mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).

    Shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.

    Place meatloaf into oven and set timer for 60 minutes.

    Mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.

    Baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.

    Bake meatloaf until internal temperature reaches 155 F (will rise to 160 F after removing from oven), about 45 min to 1 hr of cooking total.

    Remove from oven and let rest for 5 minutes before slicing.

    Serve meatloaf with remaining sauce.
