Mango Sorbet

A delicious tropical fruit flavored ice that you can serve for desert or cool off with on a hot summer day. From Caribbean Cooking Recipe.

SERVES 2 -3 (change servings and units)

    In a food processor, blend the mango chunks into a smooth mixture. Pour the mix into a 9x9 baking pan.
  2. 2
    In a saucepan, soften the gelatin in the water for about a minute. Gently heat the saucepan over medium heat until the gelatin is completely dissolved and remove from the heat.

    Into the mango puree, stir in the gelatin mix, corn syrup, lemon juice and salt. Cover the baking pan with tinfoil and place in the freezer for about three hours, occasionally stirring to prevent ice crystals. The mixture should be partially frozen.

    Put the sorbet mixture into a chilled food processor bowl. Blend until light and fluffy, but not melted.

    Return the mixture to the baking pan, cover again, and let freeze until firm, about two more hours.

    When ready to serve, remove the mixture from the freezer. Place in dessert bowls or glasses and garnish with a mint sprig. You can also serve it in an ice cream cone.

Didn't change one thing in this recipe & we had A GREAT TASTING, VERY SATISFYING FROZEN DESSERT! I enjoyed this all by myself, but another time would like to make it to serve during a more serious dinner! Either way, it's a great treat ~ Thanks for sharing it!
