Yummy alternative to a higher in fat treat!

SERVES 16 (change servings and units)

    Grease loaf pan.

    I usually just add all the ingredients together and mix.

    Bake in a 350°F oven for 45 to 50 minutes.

    Bake until toothpick inserted in center comes out clean.

    Store at room temperature up to 3 days or in refrigerator up to 1 week.

this stuff is *dangerous!* i was tempted to eat the whole loaf in one sitting. thank goodness a friend had given me the (homemade) applesauce and i was forced to share! i loosely followed this recipe, and made it my own by: 1) exceeding the cup of bananas required, 2) substituting real sugar for splenda (i can't stand that splenda aftertaste!), 3) adding a pinch of salt, 4) a bit (1 tbsp?) of vanilla, and 5) some (1/3 c?) slivered almonds. simply amazing. thanks emma! :D

    This tastes so good! I had already started mixing the ingredients, and realized that I had no bananas, so I chopped up a cup of strawberries instead! Yummy! I can't wait to try it with bananas. I will make this often I am sure! It is hard to find good, sugar free recipes, but this one hits the spot!

    Very good. I used 1/2 all-purpose flour and 1/2 whole-wheat. I used the OJ and decreased the Splenda to 3/4 c as my bananas were very ripe. Also, I tossed in 2 Tbs of chopped pecans. Thanks for the recipe help!

    I made this recipe because my diabetic son is coming home for the weekend. Good thing I made two loaves because my husband and I have pretty well finished off one of them. It is very good bread. I used 1/4 cup applesauce and 1/4 cup oil because I thought it needed a little fat in it. Thanks for the recipe.
