My late MIL had a recipe for everything! This is her never-fail-to-impress quick and easy hollandaise. This can be made in advance, kept in a jar in the refrigerator then reheated in a double boiler over hot, not boiling water. It can also be used as the base for Bearnaise.

SERVES 8 (change servings and units)

    Bring the egg yolks close to room temperature. You don't want to use them when they're very cold.

    Beat the egg yolks in the blender until frothy.

    Add remaining ingredients and blend well.

    Serve hot.
