Lively Lentils

Lentils are such a good-for-you food, and served over brown rice, make a complete meal. This recipe is a combination of several, and has a wonderful sweet and spicy flavor. Add water if they become too thick. Leftovers can be frozen.

SERVES 8 (change servings and units)

    Bring lentils to a boil in the water and simmer 25 minutes.

    In a skillet, saute onion and green pepper in oil until soft.

    Add to lentils, along with all other ingredients.

    Simmer an additional 20 minutes until lentils are cooked, but not mushy.
