Lighter Macaroni and Cheese Salad

My grandmother had been making this recipe for years and not too long ago my husband was diagnosed with diabetes and high cholesterol. (Triglycerides were over 800) So granny and I worked together to make this recipe a little healthier.

SERVES 10 -12 (change servings and units)

Directions

    Boil salad macaroni for 10 minutes.
  2. 2
    Drain and rinse with cold water, place in large mixing bowl.
  3. 3
    Add 1 cup of mayonnaise and mix well.
  4. 4
    Dice onion, chop eggs, cube cheese and drain olives.
  5. 5
    Add to bowl and mix well.
  6. 6
    Add rest of mayonnaise and dijon mustard.
  7. 7
    Mix well and chill.
