Light Banana Berry Muffins

Recipe #385405 | 30 min | 10 min prep | add private note

I wanted a recipe that was healthy and yummy - this was it! Any kind of berry will do; I used wild raspberries and they were delicious.

SERVES 12 -16 , 12 -16 muffins (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 350 degrees.
  2. 2
    Combine dry ingredients.
  3. 3
    Combine wet ingredients (except berries).
  4. 4
Mix together wet and dry ingredients. Do this in 8-10 strokes, don't overmix. If there are still bits of dry ingredients, it's okay! Add berries in last couple of strokes.
  5. 5
Fill greased muffin cups 3/4 full.
  6. 6
Bake for 18-20 minutes, or until an inserted toothpick comes out clean.
  7. 7
    Enjoy!
