A universal side dish.

SERVES 4 -6 (change servings and units)

    Melt butter in sauce pan with tight fitting lid.

    Add garlic and carrots; cook, stirring frequently until carrots begin to color, about 5 minutes.

    Add rice; stir.
  4. 4
    Add broth, zest and salt.
  5. 5
    Bring to a boil and simmer covered, about 20 minutes.

    Remove garlic and fluff rice.

OMG! This was absolutely delicous! Tomorrow I'll make some for my mom too. Extra garlic and one huge carrot. One of the best rice dishes I had. Always looking for rice dishes.Tried before a lemon rice recipe, didn't like it much and was good just with fish. But this goes with anything! Had it with Chicken Daddy's Way #355338 .

    This recipe halves easily for two people, and the subtle lemon/garlic flavors make this an outstanding side dish for any occasion or entree. As GailAnn notes, it truly is universal. Anything this easy, tasty and attractive deserves five stars.

    Made this last night and served it along with marinated tuna steaks...YUMMO! I did mince the garlic and left it in along with adding some diced onion and some mushrooms. I had homemade chicken broth I used which I think gave it even more flavor. Definately will make this again.l
