Katelyn's Southwest Breakfast Skillet

This is my Gluten Free, Wheat Free, Egg Free Breakfast skillet. Substitute cheddar for goats cheese/soy cheese for a Lactose free recipe. I make a skillet every Sunday night to feed me breakfast for the week.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Slice Sausages into bite sized pieces and fry in pan over medium heat until cooked.
  2. 2
    Remove Sausages from pan and put peppers and potatoes inches Cook till browned.
  3. 3
    Throw sausages back in and mix up.
  4. 4
    Season to taste with seasonings list above.
  5. 5
    Spread cheddar over entire skillet and cover with a lid.
  6. 6
    Once the cheese is melted sprinkle green onion over skillet and remove from heat.
