Karen's Surprise Potatoes

These potatoes are a nice change from the standard boiled, baked, or mashed potatoes. Kids and adults alike love them. They are quick and easy to prepare. I prefer to use new potatoes or red ones, but any kind can be used. This is a very old recipe and I have no idea where it originally came from.

SERVES 4 -6 (change servings and units)

Ingredients

  • 4-6 potatoes, medium sized
  • 1/4 cup butter, melted
  • 1/2 cup corn flakes, crushed
  • 1 teaspoon salt (to taste)
  • 1 teaspoon paprika (to taste)

Directions

  1. 1
    Preheat oven to 375°F Peel potatoes.
  2. 2
    Roll in melted butter, then in crushed corflakes. Put in casserole dish. Sprinkle with salt and paprika.

    Cover casserole, and bake for 1 1/4. hours.
