Irish Fisherman's Stew

In my hometown there is a tradition. the morning of a wedding the groom goes fishing with the brides father, and if the catch is good, then this stew is made for the wedding and it means the marriage will be blessed with bounty.

SERVES 4 -6 , 1 pot (change servings and units)

    sprinkle thyme over both sides of fish.
  2. 2
    in a large saucepan cook fish in 1 tablespoon of hot oil.
  3. 3
    heat remaining oil and add onion and garlic and cook until tender.
  4. 4
    stir in flour and cook 1 minute.
  5. 5
    add chicken broth , stir in corn and potatoes.
  6. 6
    remove skin and bones from fish and add to pot.
  7. 7
    Simmer 35 minutes stirring often.

Nice and filling and rather healthy, too! I used a little extra garlic and about 12 oz of boneless cod fillet. Using the boneless fish saved me from the step of deboning the fish after it cooked. I also liked reading the story behind this recipe. I'm glad that's not a tradition here.... if my husband and father went fishing before our wedding, we would have starved that night! Thanx for sharing.
