Just posting this for nutritional info. Made it up.

SERVES 4 (change servings and units)

    Steam the cauliflower until fork-tender.

    Meanwhile, warm the olive oil and fry the onion, garlic, and carrots until soft.

    Add the tomatoes and cook until soft.
