Indian Raita (Cucumber Mix)

The mixture is served chilled. Raita has a cooling effect on the palate that makes it a good choice along with spicy foods such as currys. Raita is also eaten with kebabs.

SERVES 6 , 2 cups (change servings and units)

Ingredients

  • 1 cup cucumber, grated
  • 1 cup plain 1% yogurt
  • 2 tablespoons mint, chopped
  • 1 teaspoon cumin seed
  • salt and pepper

Directions

    Grate cucumber and let sit in strainer over a bowl for about 30 minutes.

    Place cucumber and remaining ingredients in a bowl and stir to combine.

I made this with ground cumin instead of cumin seeds. (That is what I had on hand.) I also add some grated onion to the mix. Made for Everyday is Holiday Tag
