Honey Glazed Plantains

This recipe is made to accompany my Jerk Rib Eye and my Sauteed Collard Greens. They complement each other so well. But this is good as is, and is pretty quick to make. A nice sweet side dish. Recipe originally came from Aaron McCargo.

SERVES 2 (change servings and units)

    Preheat a medium frying pan and coat with canola oil.

    Slice plantains on the bias, then saute until brown.
  3. 3
    Mix in butter and scallions until butter is melted and scallions are softened.
  4. 4
    Remove from heat, and stir in honey and parsley.

Mmmm, so good! I halved the recipe and so enjoyed the flavors! Thanks for a nice taste of the Caribbean! Made for the Epicurean Queens-ZWT 2009!

    I fried the plantains in about 1/2 inch of olive oil, turning once until lightly browned, then drained on paper toweling. I poured out the oil and added 4 tbsp butter, 2 tbsp chopped scallions or green onions and cooked a minute or two. Then added 4 tbsp, or more (to taste) of the honey then poured over the plantains (I didn't use all of it) and garnished with parsley. After tasting I added a little freshly grated pepper. Delicious and different!
