Quote from SIL (Awesome)!!! I did make changes or should I say additions. I added 1 teaspoon of coconut extract,1/2 teaspoon rum extract and 1 cup of coconut flakes. I did have to bake it for 75 minutes. It could be my oven is off. But thats how long it took to puff and set. Great dessert!

I had never had anything like this so I was very excited to try it. I only made one change and that was to use vanilla bean instead of extract. It was a very interesting pie. The bottom crust kind of disappears into the filling and the top of the pie gets a kind of crunchy texture from the corn meal. I also had to bake it longer than the directions stated (about 70-75 minutes) It wasn't a bad pie but it didn't suit our tastes.
