Use this recipe in place of potatoes or rice. This is a recipe I found in my "Low Fat Mexican Recipes" cookbook. My very favorite for lowfat Mexican cooking.

SERVES 8 (change servings and units)

    Preheat oven to 350 degrees.

    Pour hominy into a colander, rinsewell with water and allow to drain.
  3. 3
    In a large bowl, combine hominy, chiles, soup sour cream, seasonings and 1/2 cup cheese.

    Mix well and pour into a nonstick baking dish.
  5. 5
    Sprinkle with remaining cheese on top.
  6. 6
    Bake 45 minutes.
