"hold the Mayo" Blue Cheese Salad Dressing

I came across this recipe on the internet a few years ago...I believe from Food Network, but not positive. This is easy to make and simply delicious with just enough "punch" to get those taste buds a kickin'. I use red wine vinegar, but if you want to keep the blue cheese color, you can switch it out to white wine vinegar instead.

SERVES 2 (change servings and units)

Directions

    Whisk together first 4 ingredients (garlic, oregano, sugar, vinegar).

    Very slowly add the olive oil while still whisking.
  3. 3
    Carefully stir in the blue cheese, then give it a taste test. Add salt & pepper if choose to do so.

    Pour dressing over some nice, crispy lettuce, like romaine hearts or an iceberg wedge -- enjoy!
