Another quick, weeknight recipe, but good enough for company (I make it for Christmas eve dinner every year). I can usually have the fish, rice pilaf, and steamed vegetable on the table in 30 minutes. This is also good using scallops (or any white fish). My family (even the kids) love this.

SERVES 6 (change servings and units)

    Preheat oven to 350. Lightly grease/spray a large shallow baking dish.

    In a small sauce pan, melt butter and add oil to heat through.
  3. 3
    Add garlic and saute until soft - do not burn.
  4. 4
    Add lemon juice and bring to a boil, turn down heat to low.
  5. 5
    While the sauce is cooking, mix the bread crumbs and cheese together.
  6. 6
    Place fish in 9x13 baking pan skin side (if you got it with skin) down.
  7. 7
    Sprinkle the bread crumb mixture over the fillets.
  8. 8
    Drizzle with the garlic butter.
  9. 9
    Bake for approximately 10m on 350 degrees.

    Broil for an additional 5 minutes or until browned on top.

    This was very good- easy and tasty and attractive presentation as well. Definitely 'company appropriate.' DH loved the lemon flavor which was very pronounced, as a previous reviewer stated. The only issue was that I had to cook it for nearly triple the time stated, and my fillets weren't even that thick. Probably my oven, but just a heads up to others. Thanks!

    This is a keeper. My hubby is not a big fish eater, but he said, "You gotta rate this one HIGH!"

    This was GREAT! Easy and the family loved it. I couldn't find Haddock, but used Cod. My 6 year old wanted more! I think I added too much lemon because you got a big taste of "tang". Definately will use this again!
