Grilled Shrimp and Avocado Salad (Aka Summer Salad)

This is the perfect summer salad, my girl friend loves it. Its low calorie, light, delicious and sooooo easy to make.

SERVES 3 -5 (change servings and units)

    Grill shrimp on medium heat, season with salt and pepper, you can use raw shrimp if desired.

    Cut up avocado, tomatoes and any other fruit or veg and throw into a bowl.
  3. 3
    add in the bean sprouts, oil, lemon juice, sugar and zest.
  4. 4
    then salt and pepper to taste!
  5. 5
    If you want to be even more calorie-wise, substitute the oil for skim milk yogurt, it makes a nice refreshing, creamy dressing.
