Grilled Salmon With Tomato Cream Sauce

Ingredients

• 6 salmon steaks, 1-inch to 2-inch thick
• celery salt
• white pepper
• 6 tablespoons unsalted butter
• 1 onion, medium and minced
• 2 garlic cloves, pressed
• 3 tomatoes, fresh and diced
• 1/2 cup dry white wine
• 1 tablespoon tarragon, fresh and chopped
• 1/2 pint heavy cream
• unsalted butter, for basting
• 2 tablespoons unsalted butter, room temp
• 2 tablespoons all-purpose flour
• chopped fresh parsley (to garnish)

Directions

   Rub salmon steaks with celery salt and pepper; refrigerate.

   Prepare grill.

   Gently saute' onion and garlic in 6 tbsp butter until transparent.

   Add tomatoes, wine, and tarragon; cook briefly to blend, add cream. When mixture returns to simmer, cover and remove from heat.

   Grill salmon steaks, basting frequently with butter, until translucent in center.

   Mix 2 tbsp butter and 2 tbsp four into a smooth paste; reheat sauce to a simmer, being careful not to overcook.

   Stirring constantly, add butter-flour paste as needed until sauce is smooth and thickened.

   Serve sauce over salmon and sprinkle with fresh parsley.
