Grilled Lemon Chicken

This is my mother-in-law's recipe and was labeled "Donna's favorite". I'm posting it here for posterity and haven't tried it yet. It looks easy and delicious! Prep time includes marinading.

SERVES 4 (change servings and units)

    In a shallow 2-quart glass casserole, combine lemon juice, garlic, oregano, sugar and salt for marinade. Place chicken breasts in marinade, cover tightly and refrigerate 2 to 4 hours, turning occasionally.

    Heat coals in grill to medium hot and grill chicken about 4 inches from heat for 5 to 7 minutes on each side. Do not overcook!

    You can also microwave the breasts covered on HIGH for 8-10 minutes on each side.

Lemon, garlic and oregano are a classic Greek flavor combination. I doubled the lemon juice because it didn't look like enough liquid. I didn't have a grill, so I used a cast-iron grill pan in a 350F oven. It wasn't hot enough, so the chicken didn't brown; next time it needs a 450F oven and a longer preheat for the cast iron. Also, next time, I would probably add some grated lemon zest to the marinade for that extra lemon punch. Made for Pick-A-Chef Fall 2009.
