Green Chili & Scallion Crab Won Ton Cups

Ingredients

• 16 wonton wrappers, square
• 1/3 cup scallion, minced
• 1/2 cup green chilies, roasted, peeled, seeded, and diced
• 1/3 cup crabmeat, cooked and shelled
• 1 tablespoon mayonnaise
• 1 tablespoon Dijon mustard
• 1/2 cup monterey jack cheese, shredded
• 1/4 teaspoon hot sauce
• nonstick cooking spray

Directions

   Mix together scallions, green chilis, crab meat, mayonnaise, dijon mustard, cheese, and hot sauce. Season with some Salt and Pepper.

   Coat 16 cups of a mini-muffin pan with the non-stick spray. Press each won ton wrapper in one of the little mini muffin cups. Arrange the edges to look pretty.

   Fill each cup with a spoonful of the crab & green chili mixture.

   Bake in a 350 degree oven for about 8-10 minutes, or until the won tons are golden brown and crispy.
