Greek Cucumber Summer Salad

This is the perfect blend of fresh summer vegetables, with yummy feta cheese, and a great and simple dressing. Adapted from BH&G magazine. Submitted by CKeeter.

SERVES 4 (change servings and units)

Ingredients

Directions

    Chop the cucumbers into 1 inch cubes. Place in a medium size bowl and sprinkle with salt. Let sit 15 minutes to release water.

    Drain excess water and stir in cherry tomatoes, onions and cheese.
  3. 3
    In a small bowl, whisk olive oil and lemon juice. Pour over cucumber mixture.

    Add black pepper and stir gently. Chill until serving.
  5. 5
    This light salad tastes especially delicious when prepared with fresh summer cucumbers and tomatoes from the garden!

Very fresh and took about 3 minutes to throw together! I used long English cukes so I didn't bother peeling or seeding them. Used grape tomatoes and cut them in half. Everything else was as listed. I made this for 1 and had a very nice lunch! Made for Ramadan Tag. Thanks!

    this is so easy and so good when you have fresh garden cukes and tomaotes. Made for PRMR. I'm traveling in NC, so had great cukes and maters to use. Delish1

    Great use for your summer garden veggies! I used the green onion and added a little extra freshly ground black pepper. It's a light and cool salad. Thanx for sharing!
