Great Eggplant Dip

I know there are lots but this is a goodie served with crusty bread.

1 1/2 cups (change servings and units)

Ingredients

Directions

    Place whole eggplant on oven tray.

    Bake in a hot oven for one hour or till soft.
  3. 3
    Remove from oven, cool slightly.
  4. 4
    Peel eggplant, chop flesh roughly.
  5. 5
    Combine flesh with remaining ingredients in food processor.

    Process till smooth.

    Refrigerate mixture overnight.
