Garlic Chicken and Lemon Skewers

This is a nice light and fresh chicken kabob recipe. It is perfect for entertaining or an easy week night dinner.

SERVES 6 (change servings and units)

    Place Chicken, Olive oil, lemon juice, garlic, thyme, lemon zest, salt and pepper into a plastic bag and marinate for 30 minutes up to 4 hours.

    Build skewers by piercing chicken, lemon wedges, and bread cubes in an alternating fashion.
  3. 3
    Cook on Grill until chicken is cooked through and bread is crispy. Be careful not to burn the bread.
  4. 4
    Serve with fresh grilled vegetables that pair well with the lemon flavor -- I prefer zucchini.
