Sweet&Savory variation equals perfect for one! I used extra virgin olive oil. 1/8 yellow onion and 2 large eggs for me, let the onions get well done. Salted eggs. Put on a sourdough English muffin, well toasted, with a little butter and generous Polaner jam-Grape is my favorite right now. One pan to clean and what a fantastic blend of flavors!

Fried onions make everything taste better. I let my onions lightly carmelize and before adding the eggs. Delicious over toast! Thanx for sharing.

it is ridiculous that such a little change can make eggs sooo good. These were wonderful, lots of flavor.

Other than scaling the recipe down for only 2 eggs and adding freshly ground pepper I prepared this as written. What a wonderful flavour boost those fried onions give to the eggs! I loved this recipe. I'll be adding fried onions to my eggs from now on. Made for Went to the Market Tag.
