Fresh Pesto and Tomato Salad

Sometimes simple and fresh is best! That is for sure the face with this recipe that I put together while creating recipes for my vegetarian food blog - http://weekendcarnivore.com . For the pesto, I used Kittencal's Kittencal's Perfect Pesto which really is great stuff! This is enough for one but can be very easily multiplied.

SERVES 1 (change servings and units)

    Lay the tomato slices out on a plate with the ends just overlapping.

    Drizzle the fresh pesto liberally over the tomato slices.
  3. 3
    Scatter with your toasted pine nuts and enjoy.

This is an amazing recipe. For something soooo simple it drew gasps of delight from our guests. Freshly made pesto using Kittencal's Perfect Pesto with lightly toasted pinenuts sprinkled on tops, it looked good and tasted explosively awesome : ))) Thanks Sarah Jayne for a recipe we will use over and over and over.

    Wow! How can something this simple be so good. I'm already craving more. I had made fresh pesto last night, happened to have a just-picked tomato from my garden and pine nuts in the fridge (leftover from making the pesto). I feel like one lucky girl. I opted to not toast my pine nuts. This was so tasty, fresh and healthy. I think I'm headed out to the garden to pick another tomato. ~Made for the Oct. Veg*n Swap~
