Very good recipe. Dough is easy to work with. My pasta rolling skills need some work. I just got my KitchenAid pasta roller attachment, so am a newbie. I made ravioli stuffed with a mixture of ricotta, goat cheese and fresh herbs. Looking forward to trying the beet variation. Made for Fall 2009 My 3 Chefs game.
