Giving five stars as this was a super easy cake to make, uses minimal ingredients and you dont need to get out your mixmaster for this one. I've made similar cakes to this one using whole boiled oranges. The mandarin flavour was lovely and sweet. A very moist cake that tastes even better the day after baking. I used the microwave method given for the mandarins and used 3 large "Taylor Lee' mandarins for this recipe. This cake easily makes 8 to 10 serves. Photo also to be posted.
