From Vegetarian Times Issue: October 1, 2007. I've seen a few on 'Zaar here, this one is a little different. Posted for safe keeping.

SERVES 2 (change servings and units)

Directions

    Toss fennel with orange segments in large bowl.

    Add oil and lemon juice, and carefully mix without crushing orange segments.

    Season with salt and pepper, and sprinkle with fresh mint.
