A nice spicy, tomato base recipe to be served over rice of your choice

SERVES 6 -8 (change servings and units)

    Cook finely chopped vegetables, add salt to taste. Cook mixture until the vegetables are very soft.

    Combine first three ingredients, add flour with oil. Add and bring to a boil. Add chicken broth and pour over 8 chicken breasts (precooked) Sprinkle generously with grated cheese (You can substitute Monterrey Jack).

    Bake in a hot oven (400 degrees_) until cheese melts.
