Fall Favorite Sweet Potatoes

This is a Thanksgiving classic in our home, but it is good all fall and winter. It can be halved, made ahead and reheated and everyone loves it — even the kids!

SERVES 8 -10 (change servings and units)

    Preheat oven to 375 degrees. Bake sweet potatoes for 1 hour or until tender. Reset oven to 350 degrees.

    Mash the sweet potatoes, adding butter, cream, and Madeira. Add cinnamon, salt, nutmeg, and orange rind, adjust seasonings, and place in a buttered baking dish. Dot with butter, sprinkle with optional pecans or walnuts, and bake for 25 minutes.
