Fabulous Lamb Stew

I love lamb and I love this stew! I came up with this recipe a few years ago. Every time I serve it I get oohs and awes! The extra effort is worth it.

SERVES 10 , 10 cups (change servings and units)

    In a large pot place the 12 cups of water, the lamb and marrow bones. Bring to a boil and then lower flame and simmer for 1 1/2 hours.

    In a separate pan saute the onion and celery in the canola oil for about 10 minutes. Then add the garlic and saute for a few more minutes. Set aside.

    After the bones have been simmering for 1 1/2 hours add the sauteed veggies plus the rest of the ingredients including the salt and pepper and simmer for 1 1/2 more hours.
