Wonderful base recipe for using up left overs! We really enjoyed this with low-carb wheat tortillas and our leftover Fiesta Chicken. Thank you for posting!

FeelinYummy this is fantastic! Delicious, versatile, and attractive. I used leftover turkey, onion, black beans, cheddar, pickled banana peppers, and light sprinkling of cumin. Garnished with low fat sour cream, tomatoes, and avocado. The buttering at the bottom does crisp it up perfectly. Made for Theirs, Yours, & Mine game.
