Two of my favorite sandwiches made into one! What could be better than that! This can be made lighter by removing a bit of the egg yolk. Delicious sandwich! Found on Cooking Light.com

SERVES 4 (change servings and units)

    Combine first 6 ingredients in a medium bowl, stirring well.
  2. 2
    Coarsely chop eggs. Add eggs to mayonnaise mixture; stir gently to combine.
  3. 3
    Arrange 4 bread slices on a cutting board or work surface. Top each bread slice with 1/2 cup egg mixture, 2 bacon pieces, 2 tomato slices, 1 lettuce leaf, and 1 bread slice. Serve sandwich immediately.

    This was a light tasting delicious egg sandwich for the summer! This was the first time I have had egg salad prepared this way. I also prepared my bacon as in Best on Bacon - it went very well with this. I also split the recipe in half without any issues. Thanks for sharing. [Made & Reviewed for I Recommend Tag]

    I don't like egg salad but this was good. Added a little fresh cilantro.

    wow this is a great egg sandwich. One of the best we had. I loved the dijon mustard in it. I omitted the lemon rind. I didn't toast the bread but next time I'll do. It's just that I didn't read the recipe carefully LOL Thanks Kittycatmom Made for Holiday tag
