Easy Iceberg Wedge Salad

Great for bbq's and picnics. To take and go-prepare the dressing and place it in a screw-top jar. Assemble just prior to serving.

SERVES 4 (change servings and units)

    Cut lettuce in half. Remove the outer leaves from the lettuce (THese are discarded). Rinse the lettuce halves and set aside, cut-side down to dry.

    Cut each lettuce half into quarters to create the wedges. You now have 8 small wedges.

    in a bowl- combine the sweet chilli sauce, the oil, lime zest and lime juice. Mix well.
  4. 4
    Stir the coriander through the sauce.
  5. 5
    Place the wedges on serving plates or a large platter.
  6. 6
    Season with salt and pepper.

This was such an easy recipe and such a different way to serve Lettuce. I followed the recipe but didnt have fresh coriander only dried and not quite not enough so I added a touch of mint and 1/2 teaspoon wholegrain honey mustard, but everything else the same as recipe states. The dressing got mixed reactions in this family DD who doesn't like dressings but loves citrus flavours loved this as did I. DH wasnt quite sure and DS liked it but he only drizzled a little over his lettuce. The dressing has such a very tangy citrus taste, sweet yet sour and I found it wonderful served over the lettuce. Thanks Jubes will be making this again with summer approaching so fast!

    This is an easy salad to make and serve. It is very attractive on a plate, drizzled with the fresh dressing. The dressing has a nice citrus twang with just a touch of oil that gives it the satisfying taste that is often missing from low fat dressings. Made for PAC Fall 2009
