Recipe #357633 | 40 min | 10 min prep | add private note

This super easy and yummy recipe is originally from Souther Living. My family loves this for dinner-- even the picky eaters.

SERVES 4 -6 , 12 enchiladas (change servings and units)

Ingredients

Directions

  1. 1
Heat oil in a large pan and add onions. Cook until soft.
  2. 2
Add ground beef and cook over medium heat until meat is browned, stirring until meat crumbles; drain and return to skillet.
  3. 3
Stir in tomato soup and enchilada sauce. Mix well and bring to a simmer.
  4. 4
Spread about 1/4 cup meat mixture on each tortilla; sprinkle tortillas evenly with 1 cup cheese. Roll up, and place, seam side down, in a 9x13-inch baking dish. Pour remaining meat mixture over tortillas.
  5. 5
Cover and bake at 350 degrees for 20 minutes.
  6. 6
Uncover and sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese melts.
