Oct 5, 2009

We visited my aunt and uncle this past summer and my aunt made it and I found it very delicious. I have made it several times since! The recipe is very easy to increase to feed the amount of people you need to!

SERVES 2 , 2 quesadillas (change servings and units)

Ingredients

Directions

  1. 1
Fry eggs individually in a frying pan using butter.
  2. 2
Put 1 fried egg on each tortilla 1/2.
  3. 3
Top with salsa and then cheese.
  4. 4
Fold tortilla in 1/2 and fry in frying pan using butter, flipping the tortilla to brown both sides and the cheese is melted.
  5. 5
Serve while warm. You can serve with sourcream if you desire.
  6. 6
If you want to make it a few minutes ahead you can keep the quesadillas warm in a 150-200 degree Farenheit oven.
