Drunken Irishman Glaze

A fantastic glaze decoded from my favorite Irish pub. Sure, there may have been some shots passed around between myself and the chef to crack the code, but I'm more than willing to make sacrifices. This is amazing on top of just about anything grilled or broiled... for a sweet little kick of Irish bliss.

SERVES 24 , 1 cup (change servings and units)

Ingredients

    Sweat onions and garlic in peanut oil, be careful to not brown.

    Add liquids, bring to a boil, reduce to a simmer.
  3. 3
    Add brown sugar, ginger, and cayenne.
  4. 4
    Stir frequently until drys are incorporated. Be sure to watch heat levels and regulate down as necessary to maintain a low simmer.

    Cook 20-30 minutes until sauce reduces by half.
  6. 6
    Drizzle 2 t.over your favorite food or brush on while cooking to glaze.
